The Stanford Inn along the Mendocino Coast offers sustainability, beauty and vegan goodnessIt hasn’t seemed like spring, at least for those of us living in states still getting piled with snow. So, instead of sticking around the cold weather, why not take a spring getaway to an eco-resort with a vegan restaurant and a relaxing center that promotes “living well”?

The Stanford Inn, a Mendocino Resort, is nestled on the California coast making it the perfect spring getaway. Not only is it a beautiful eco-resort, but it’s also the only vegan resort in the United States.

Founded by Joan and Jeff Stanford, the two were drawn to Mendocino’s beauty and created a family business that has touched many lives. Early on, they realized their business could live off the land and give back to the planet all at the same time.

“We realized that we could live more gently: loving animals, we quit eating them; adopting sustainable practices, we returned part of the land to farming, creating edible, organic gardens; and believing we could do more, we adopted other vocations,” the brochure reads.

As a sustainable green inn, the Stanford provides all sorts of green features. Let’s start with its Mendocino Center for Living Well, which is far from your typical health spa. The wellness center offers all sorts of massages and facials including deep tissue, botanical aromatherapy, aroma stone facial, calm waters, among many others.

The center also provides a range of classes like Exploring Nutrition with Nutritional Consultant Sid Garza-Hillman and Yoga and Tai Chi with a certified instructor. Sure sounds like a great way to get rid of some stress.

In addition to its resort spa, the Stanford Inn also provides some of the greatest vegan cuisine at its Ravens’ Restaurant. Every dish is local, 99 percent organic and vegetarian and/or vegan. The restaurant also serves certified and sustainable organic wines.

Food never goes to waste, as all foods are composted, along with the recycling of other materials like glass, paper and cardboard.

The Stanford Inn keeps getting better, because not only is it vegan, but also extremely conscious. Here are just a few of the ways it gives back to the planet:

1. Provides an electric car charging station for guests.
2. Helps protect Big River from environmental degradation.
3. Does not use harmful chemicals, pesticides or herbicides.
4. Only uses green cleaning products.
5. Uses diesel powered trucks fueled with biodiesel made from reclaimed vegetable oils.
