Family Favorite Recipe-Boston Baked Beans

320px-Fenway_park_20060619With the start of the 2013 World Series upon us and in honor of the Boston Red Sox, Eco News Network offers this family favorite recipe for Boston Baked Beans. No joke–this is my grandmother’s recipe (officially called Mother Forbes’ Boston Baked Beans) updated slightly so you can use a crock pot if you want. Note that Eco News Network takes no responsibility for the potential aftereffect of eating these beans!

Mother Forbes’ Boston Baked Beans
Ingredients

  • 1 lb. yellow eye beans
  • 1 small-medium sweet onion
  • 4 tablespoons brown sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon dry mustard
  • 1/4 lb. bacon cut into approx. 1/2″ pieces (my grandmother used salt pork and you can too if you want instead of bacon)

Soak beans in large pot in cold water overnight. Drain off liquid, cover with fresh water and boil for 1/2 hour. Reserve water. Put beans in cast iron braising-type pot, or crockpot if you are using one, and add the above ingredients. Mix with a slotted spoon. Cover with water from the boiling process and put bacon chunks on top. Cook covered in the oven at 300 degrees for about 6 hours stirring occasionally. If using a crock pot cook on low. It may take slightly longer. Beans should be tender and liquid should reduce to a savory sauce.
