Since we are smack in the middle of October, we still have plenty of apple recipes to try in honor of National Apple Month! This Sweet Squash with Apples (courtesy of my sister Michelle) is extremely tasty and goes well grilled chicken.
Ingredients:
1 Package of cubed butternut squash (or cut/peel it yourself about 1 inch cubes)
1 whole apple (gala/pink lady/red delicious) peeled and 1/2 inch cubed
Organic unsalted butter (about a half a stick)
Organic maple syrup
Brown sugar (1-2 tbsp)
Cinnamon (1/2 tbsp)
Allspice (1 tsp)
Pecans (crushed…1/4 cup)
Raisins (optional)
Salt and Pepper to taste
Directions:
Preheat Oven to 400 degrees.
Lightly grease a pyrex/baking sheet with unsalted butter.
Dot top of squash with butter.
Roast for 35-40 minutes.
Meanwhile, in a pan, heat butter (enough to cover the bottom).
Add apple cubes, cinnamon, brown sugar, allspice, stir occasionally until apples are tender.
Add raisins.
Add pecans.
Once squash has been baking for 35 minutes, take it out of oven and turn the squash cubes over.
Take the apple mix and pour it onto the baking sheet.
Mix well.
Sprinkle the top of the squash with maple syrup, making sure to get a few drops on all of the pieces of squash.
Sprinkle salt and pepper to taste.
Bake another 15-20 minutes.
(Serves four people)
