My sister loves Indian cuisine and has created this delicious Indian lentil stew with spices that are basic staples in traditional Indian dishes. It is a perfect hearty meal that will take the chill out of winter for a little while and give you plenty of protein at the same time. Plus, it is made in a crock pot so preparation time is almost nothing!
1 cup brown lentils
1 large potato (peeled and cubed)
1 small onion (chopped)
2 carrots (peeled and chopped)
1 tbs cumin
½ tsp chili powder
½ tsp turmeric
½ tsp ginger powder
2 cloves chopped garlic
Enough chicken (or vegetable) broth to cover ingredients
Parsley (to garnish)
Salt and pepper to taste
-Put all ingredients into a crock pot-wait 4-5 hours.
-Stir once or twice after the first hour.
-Add chopped parsley and then serve.
