Chef McClelland is committed to environmental conservation and implements this practice into his restaurants and menus. He harvests organic fruits, vegetables, herbs, eggs and uses them in his culinary masteries. Any unused produce is returned to the farm and is recycled into soil nutrients and animal feed.
