Fast, easy this Magical Eggplant Dip is probably one of the healthiest indulgences you’ll find around with the best combination of minimum effort required and delicious reward.
Aunt Polly’s Magical Eggplant Dip
Cooking Time: 20 minutes
o 1 steamed eggplant (aubergine); cut in half and steam in its skin until soft
o 2 to 3 cloves of garlic
o A handful of fresh parsley
o 2 to 3 tablespoons balsamic vinegar; more if you prefer
o A few drops of olive oil
o Salt to taste
o Black pepper corns
o A few drops of lemon juice
o Place the parsley in your food processor and process until it’s finely chopped.
o Add in your eggplant and remaining ingredients, and process until smooth.
o Spoon into a serving bowl and refrigerate for a few hours. Enjoy!
