Family Favorite Recipe-Bruschetta

With Christmas rapidly approaching, holiday parties are everywhere. This also means scrumptious cookies, rich pastries, and big salty dinners. Why not try something a little lighter? This fresh bruschetta is quick, healthy, and delicious. Oh and did I mention the Christmas colors? Bruschetta is perfect for serving at your holiday gatherings!

2 ½ cups finely chopped organic, heirloom tomatoes
½ cup sliced basil leaves
2 tablespoons balsamic vinegar
1/8 cup grated parmesan cheese
1/8 cup grated pecorino cheese
3 tablespoons extra virgin olive oil
2 teaspoons minced garlic
2 tablespoons of capers
½ teaspoon sea salt
1 teaspoon ground pepper
1 fresh baguette, sliced in half and toasted

-Add tomatoes, garlic, basil, cheeses, balsamic vinegar, olive oil, capers, salt and pepper to a mixing bowl and mix thoroughly.
-Allow mixture to sit for 20 minutes so flavors can marinate and absorb together.
-Slice the warm baguette into individual pieces and spread the bruschetta on top.
