Easy Tomato Soup Recipe

Since many of us areĀ all still trying to make it through these tough winter months, it can be amusingĀ to think of ways to warm up. One great way to do this is by making wintery meals that cut the chill and fill us with a delicious inner warmth, the kind only cooking with (or for) loved ones can bring.

One of the things I love to make in winter is this easy tomato soup recipe. Why not grab a member of your household and fill the kitchen with scrumptious smells.

4 Cups finely chopped (heirloom) tomatoes
2 Tbs extra-virgen olive oil
1 medium-sized yellow onion (chopped)
1 garlic clove (peeled and chopped)
2 Tbs butter
2 Tbs all-purpose flour
2 Cups chicken broth
1 Teaspoon sea salt
1/2 Teaspoon sugar
Handful of fresh basil leaves
Freshly grated parmesan cheese

-In a large pot, using medium heat, add the olive oil.
-Add garlic and onions. After they become golden, add the chicken broth and tomatoes.
-Bring mixture to a boil and then gently let it boil for about 20 minutes.
-In a separate pot, add the butter (using medium heat).
-Stir in the flour for the roux.
-Cook (while continually stirring) the roux until golden brown.
-Stir in the tomato mixture gradually.
-Add the sugar and salt.
-Add the basil.
-Top with freshly grated parmesan.

Now only one thing left to do. Make our Sophisticated Grilled Cheese sandwich to accompany it and enjoy!
